So my roofed XS750 is up and running but it's ugly (also susceptable to cross wind)

Here's what I may do (on NC700X)

NC700 got fake gas tank, forward leaning engine, and very low seat rail.

Not yet.
I will buy one this weekend (hopefully..)

NC700 gets 65~70MPG so that will be great.
 
Neat project, have you looked at Dan Gurney's "Alligator" motorcycle design? Might give you some inspiration. There is one on display at the Barber museum.

This is exatcly what I was thinking about. (Plus a roof LOL)
So it looks like stock handlebars will work fine.

I bought the bike also. It got Montana title so now in the process of getting CA title.
