Will this brake line set work on my 78 GL1000? The description says it is for a 79, but what's the difference?

You're in Richmond. There has got to be at least one, if not more, hydraulic brake line builders in the area. Take your original hoses and ask one of them to make new ones just like them. My local line builder here did the same for me, metric fittings with exactly the same fitting angles, 600 psi hose, and new crush washers. I'm in "nowhere" Christiansburg, and I grew up around Richmond, so you should have even more places to choose from than I do. The guy here charges me about $50.00 per pair of hoses that he makes for me. Places that make lines for Japanese tractors will have all the metric stuff just like our Hondas use.
