I removed the rubber boot,
snap ring,
push rod,

I see the concave end of the piston.....

I tapped on the m/c
I blew some air in the drain screw...nothing!

so,

how is this thing supposed to come out for the rebuild?

good thing this is the practice piece

Try letting it soak in penetrating oil for a day or so. then hook it up to a working master cylinder and try forcing it out with fluid pressure.

If that doesn't work, try boiling it for an hour in distilled water. If that won't work, drill a hole in the piston, screw in a self-tapping screw, and pull/pry it out. Just don't scratch the cylinder wall!
 
Grease gun, a 1/8 npt grease fitting or unscrew the end off the hose and it will screw into the line threads good enough to hold while you pump grease into it. Guaranteed to push the piston out, works on calipers too.
