I'd save the stock exhaust as it looks to be good and solid. Get Jardines pipes or headers and HD take off cans if you want louder. Yes looks like you'll need to change out head gaskets.

If you need to redo the ignition, I can't recommend the C5 highly enough, it is spendy but it is the best one out there and comes with everything you need including coils.

I'd stick to stock ignition until I could afford c5. 1000 or 1100 headers will fit. As will aftermarket headers for either. If you are a lousy mechanic you'd better be very patient to learn to adapt the dual or single carb conversion. A great deal has been done in single carb conversion but still no definitive step by step set up available. The guys here will happily help you in whatever you choose to do but the actual work and expense will be yours. You'll need to post very descriptively and follow suggestions.

That looks to me like a 1000 bike and motor. So I guess those are 1000 header pipes. Might be shorty mufflers from JC Whitney on them.
