Howdy! I recently acquired two project GL1000s...
One is a 76 that is was completely disassembled, and is missing the front forks and wheel, at a minimum.
The other is a 78 that was put in storage around 1980 due to the original owner's health. Sadly he passed away shortly after, and his heir waited a few decades to deal with the storage situation. The guy I got it from knew the family and picked it up, barn-find style. It needs a lot of work and cleanup, but is largely complete. It still has the original tires and 1979 license plate.
Pretty much guarantees that I'll have plenty of wrenching to do over the next few years.

I'm not a big fan of the 'barbed wire' looking customization on the fenders. The 78 had full dress with what looked like some custom painting that matched the marble look leather on the seat. The fairing and rear accessories/mounts are stacked on the far side of the storage unit. There is a big honkin rear bumper thing with lights or reflectors all around. Pretty sure I won't be putting that part of the jigsaw puzzle back together.

Yep you will be busy for sure but plenty of parts available out there and easy bikes to work on. Welcome
